When he drew the first sketches of what became the Pierrel style, Dominique set out to favor freshness and elegance; for this, he has favored Chardonnay, Pinot Meunier and Pinot Noir, from very calcareous soils classified as Premier Cru, in the blends of his wines.
It is in the hushed universe of Champagne cellars that Pierrel champagnes undergo a slow maturation of at least three years, a guarantee of optimal quality for each cuvée.
Rather than imposing a "house taste" on his cuvées, by working on his dosage liqueurs, he chooses to let the terroir of origin of the grapes he selects express itself, by carefully dosing his bruts thanks to a process particular and rare elaboration. The finishing of the wines at disgorgement is done with a natural liqueur made from concentrated grape must which preserves the aromatic richness of the cuvées, while optimizing their aging potential.
